It took me a couple of days to get moving on cooking with the 8 garlic scapes I was able to get from my garden. Just enough for one recipe of *something*, so I didn’t want to waste it.
Ended up making this pesto, and it was spectacular. Ground almonds, fresh nutty parmesan, good olive oil, and fresh, vibrant garlic flavor. Going strong for 2 meals in a row with this one, it won’t last long.
